I am an architect and found Valencia really interesting with its fusion of styles. The Calatrava architecture is breathtaking, even the Alameda metro station is worth a look. His City of Arts and Sciences is a superb complex, still being worked on. We took two and a half days to do the old and the new one and would have liked an extra day to wander down to the port.
